Simple and delicious, this farmer sausage potato casserole can be made in your oven, but also in your instant pot or slow cooker.
With basic ingredients, such as sausage, potatoes, cream, and corn, it makes a hearty meal that is sure to please.
Serve with a side of sourdough Biscuits, and you have a meal fit for a king. Every time I make this meal, I feel like it’s less than five stars simply because of how easy it is to make!
We always make our own Farmers Sausage and usually have sausage in our freezer. You can buy Farmers Sausage at your local butcher shop.
How To Make Farmer Sausage Potato Casserole
This 7-ingredient casserole will become a staple in your home. Simple and hearty, you can use your homegrown potatoes, veggies, and even your own homemade farmer’s sausage (if you are that ambitious)!
Ingredients:
5-6 medium size potatoes, peeled, and cut into ¾ inch cubes.
1 coil farmers sausage, cut into 1/2 inch slivers
1 cup cream
1 can corn (or 2 cups other mixed veggies)
Salt and pepper
Barbecue Sauce of your choice
Instructions:
In a 6qt casserole dish, place your cut-up potatoes at the bottom. Add your veggies, and mix them together. Sprinkle salt and pepper generously over the mixture.
Next, pour cream all over. Layer your sausage pieces over the potatoes. Squirt BBQ sauce generously over the raw sausage.

Bake at 350*F in a regular oven for 1.5 hours (90 minutes).
In an Instant Pot, cook it for 20 minutes or use the slow cooker option for 6 hours. Add an additional ½ cup of water so it doesn’t burn on the bottom.
Depending on your circumstances, this dish can be slow-cooked, or pressured cooked for a quick meal. Meal prepping in the morning? Put it into the slow cooker.
Need a quick Sunday lunch? Prepare it in the pressure cooker.
